- 5 or 6 citrus of your choice, peeled and sliced crosswise - navel, cara cara, blood oranges and/or grapefruits
- a handful of shaved red onion
- 1/3 cup of Marcona almonds
- a handful of fresh herbs like basil and mint
- a generous drizzle of olive oil (about 3-4 Tbs)
- Salt and pepper to garnish
Instructions
- Using a small paring knife, slice off the end of each citrus, then peel each side, removing the membrane. Slice the citrus crosswise until you have enough citrus medallions to fill a platter.
- Arrange your sliced citrus on a platter.
- Garnish with Marcona almonds, shaved red onion, and fresh herbs.
- Drizzle with olive oil, and sprinkle with salt and pepper to taste.
