Let me start by saying that ice cream and iced coffee are two of my favorite things on the planet. So winter’s arrival always leaves me in a bit of a predicament: do I abandon icy treats until warmer temps arrive? It just doesn’t seem right. I know, I know, there’s nothing quite like strolling down the sidewalk during the holidays with a giant cup of hot chocolate to warm you up. But what about those times when you’re huddled inside around a toasty fire with your cozy socks on? Cue the frozen hot chocolate.

It’s probably clear just by looking at these that I didn’t skimp on the chocolate. What you may not guess is that these shakes also include a full cup of spinach per serving, and I guarantee you won’t be able to taste it. A sweet indulgence with a side of a nutrient-dense power greens? You’re welcome.
Now for the as yet unmentioned ingredient that is truly the star of the show: mint, also known as chocolate’s BFF. As with most of our recipes, we kept these shakes free of syrups and excessive sugar and instead loaded them with fresh ingredients. Of course, all without sacrificing taste which comes here in the form of fresh mint, and lots of it!

Frozen Peppermint Hot Chocolate
Serves 1
Healthy Frozen Peppermint Hot Chocolate
Categories
Ingredients
- 1/2 cup cashew milk
- 1 5.3 oz container vanilla greek yogurt
- 1 cup spinach
- 2/3 cup mint leaves
- 2 tbsp unsweetened cocoa powder
- 2 1/2 tbsp coconut sugar
- 1/4 tsp vanilla extract
- pinch of sea salt
- ice to reach consistency
Instructions
- Combine all ingredients in blender and blend on high until smooth.
- Top with whipped cream, garnish with dark chocolate shavings and fresh mint leaves, and enjoy!

The recipe doesn’t specify ice. I’m assuming ice is needed to make it frozen. If so, how much?
