Hi Donna – I haven’t tested these using a gluten free flour, but imagine a 1:1 replacement flour like Bob’s Red Mill could work. Let me know if you test it out!

These sound great, especially being egg free as my daughter has anaphylactic allergy to eggs & is gluten intolerant. Guessing it’s possible to make these using gluten free flour?! I love puffy biscuits, is it necessary to hit the tray? Thanks!
