Ingredients
- 4 salmon fillets
- olive oil
- Good & Gather Chile Lime Seasoning
Peach-Tomato Salsa
- 1 pint cherry tomatoes, halved
- 2 peaches or nectarines, cut into wedges
- olive oil
- salt & pepper
- green onions, sliced on diagonal
Instructions
- Soak cedar planks in water for at least an hour.
- Heat grill to 400 F.
- Place salmon fillets on a cedar plank, drizzle with olive oil, and season with chile lime seasoning.
- Place cedar plank over the flame and close the grill. Cook for 11-13 minutes, until fish flakes easily but is still slightly pink in the center.
- Meanwhile, make peach-tomato salsa by tossing everything together.
- Remove salmon from grill, transfer to a platter, and top with peach-tomato salsa. Serve!
